Cold melon soup with Iberian ham and feta cheese

In this hot weather, nothing better than this cold melon soup with Iberian ham and feta cheese, It will not only refresh you, but it will also hydrate you and you will enjoy it!

It is delicious and the contrast of the sweet melon with the salty Iberian ham and feta cheese is an explosion of flavor, so try it! It is also quick and easy to prepare.

INGREDIENTS (6 persons)

  • 1 kg of melon skinned and chopped Cold melon soup with Iberian ham and feta cheese
  • 220 gr of ideal milk or two Greek yogurts
  • 1/2 teaspoon of salt and freshly ground black pepper
  • Dribble of olive oil
  • Iberian ham chopped
  • Feta cheese

STEP BY STEP RECIPE:

  1. In a blender put all the melon and blend it for one minute, until it is completely liquid.
  2. Add the ideal milk or yogurt, salt and pepper and beat for another minute.
  3. Store in the refrigerator until well chilled.
  4. When serving, add to taste, chopped Iberian ham, pieces of feta cheese to taste, and pieces of melon. Add a drizzle of extra olive oil and a little chopped parsley and chives.
