Healthy cake with figs, mascarpone and walnuts

In addition, it is a very easy recipe that you can make in a short time. Ideal for not giving up sweets and being able to take care of yourself, since there is no added white sugar.

INGREDIENTS:
For the base:
  • 200 g of Digestive 0% cookies with added sugars
  • 2 tablespoons of coconut or olive oil.
  • 100 g chopped walnuts
For the filling:
  • 500 gr of cheese mascarpone
  • 3 egg yolks
  • Juice of half a lemon
  • 4 tablespoons of erythritol or honey
  • 6 figs fresh
  • Lime or lemon peel zest
RECIPE ELABORATION STEP BY STEP: 
 
  1. With the help of a food processor, chop the cookies and walnuts into small granules without becoming a powder. Add the coconut oil and stir.Healthy cake with figs, mascarpone and walnuts
  2. In a round mold of approximately 18- 20 cm in diameter, spread the previous mixture and press lightly with your hands or a spatula until the entire base is covered. If you see that it remains very loose, it needs more fat. Put everything back in the robot and add a little more oil.
  3. In a bowl, add the mascarpone, the three egg yolks, the juice of half a lemon and the erythritol and beat until well blended.
  4. Pour this mixture over the cookie base and place the washed and halved figs on top.
  5. Bake at 180º C for 30 minutes. If you move it, the central part will move a little bit, but then when it cools it will set and it will be super creamy.
  6. Remove and finally grate some lemon or lime peel over the top. Let cool in the refrigerator.
