Healthy cake with figs, mascarpone and walnuts

INGREDIENTS:
- 200 g of Digestive 0% cookies with added sugars
- 2 tablespoons of coconut or olive oil.
- 100 g chopped walnuts
- 500 gr of cheese mascarpone
- 3 egg yolks
- Juice of half a lemon
- 4 tablespoons of erythritol or honey
- 6 figs fresh
- Lime or lemon peel zest
RECIPE ELABORATION STEP BY STEP:
- With the help of a food processor, chop the cookies and walnuts into small granules without becoming a powder. Add the coconut oil and stir.
- In a round mold of approximately 18- 20 cm in diameter, spread the previous mixture and press lightly with your hands or a spatula until the entire base is covered. If you see that it remains very loose, it needs more fat. Put everything back in the robot and add a little more oil.
- In a bowl, add the mascarpone, the three egg yolks, the juice of half a lemon and the erythritol and beat until well blended.
- Pour this mixture over the cookie base and place the washed and halved figs on top.
- Bake at 180º C for 30 minutes. If you move it, the central part will move a little bit, but then when it cools it will set and it will be super creamy.
- Remove and finally grate some lemon or lime peel over the top. Let cool in the refrigerator.
