Last Friday I had the opportunity to cook together with Samantha Vallejo Nágera , to which

I admire her for her energy, for her authenticity, for her professionalism, for being a born fighter and worker, and of course, for her social actions. Besides, I like her!

It was a wonderful evening, in a very relaxed atmosphere, where I learned a lot.  healthy and easy recipes, that Samantha hasMr.

step by step. During the class, we were able to collaborate, hand in hand with her in the preparation of the various dishes she prepared for us. In addition, she taught us some very interesting tricks and told us many anecdotes of her time in the company. Masterchef and of the events he does with his catering, even when he goes to private homes to cook!

I really liked her approachability and the culinary proposals she made, as I said, simple dishes that we are able to make at home with basic ingredients that are in any fridge and very healthy, because Samantha, like many of us, likes to take care of ourselves!

Below I explain the recipe step by step. I hope you like them and that you make them in case, that's why I share them!

Sautéed zucchini spaghetti or in salad.

In this preparation I had the pleasure of helping a little, cutting the zucchini with a special utensil for it (but you can get it almost anywhere).

Ingredientes :

  • Zucchini
  • Arugula
  • Raisins
  • Pumpkin seeds
  • Basil
  • Balsamic vinegar
  • Extra virgin olive oil
  • Lemon, salt and pepper

Steps :

  1. Put salt and a little oil in a frying pan and sauté them over high heat. This could be a dish in itself, accompanying a 2nd course, for example.
  2. If we want to make a salad, we use the raw spaghetti in a salad bowl and add arugula, arugula, raisins, raisins to taste, and a little chopped basil.
  3. We make a vinaigrette with vinegar, oil, a squeeze of lemon, salt and pepper and dress the salad. Ready!

 

Quinoa with curried vegetables

Ingredients:

  • Boiled quinoa
  • Zucchini
  • Carrot
  • Brocoli
  • Fresh cilantro
  • Curry
  • Extra virgin olive oil
  • Salt

Steps :

  1. We boil the quinoa. First it is washed very well in a colander and a white foam (saporina) is eliminated. Pour twice as much water as quinoa in a saucepan, when it starts to boil add a little salt and the quinoa and leave it over medium heat until the water is consumed, about 10-12 min.
  2. Cut carrots and zucchini into small squares and broccoli into small sprouts. Put everything in a pan with a little oil over low heat until tender, not too poached or raw, with a little curry (to taste) and chopped cilantro (also to taste).
  3. Finally we add the quinoa that we will have drained if it had a little water, and we sauté it all for a few minutes. Ready!

 

Prawn curry Ingredients with brown rice :

Ingredients for the curry :

  1. Cooked prawns
  2. Carrot
  3. Celery
  4. Shallot
  5. Mushrooms
  6. Fresh ginger
  7. Cayenne
  8. Curry
  9. Fresh cilantro
  10. Grapes
  11. Coconut milk
  12. Extra virgin olive oil
  13. Salt

Ingredients for rice :

  1. Brown rice
  2. Sesame
  3. Raisins
  4. Dried figs
  5. Soy sauce
  6. Fresh cilantro

Steps :

  • Boil the brown rice according to the manufacturer's instructions. The best thing to do, according to Samantha, is to do it in abundant water and then strain it and let it dry very well.
  • In a saucepan fry the shallot and the finely chopped garlic with a little oil, add a small piece of chopped celery and the carrots, then the sliced mushrooms and finally the chopped coriander and a piece of grated or finely chopped ginger. When everything is well sautéed, add the curry (to taste, depending on whether you like it spicy or not, and a little chili pepper).
  • Then add the coconut milk, the cooked prawns and let it cook until the milk has reduced a little.
  • Season with salt and add some grapes cut in half, which will give a fresh and crunchy touch to the dish.
  • Sauté the rice in a frying pan with a little oil and add the chopped coriander, raisins and figs in small pieces and a little sesame. We can add a bit of soy sauce to give it a touch of saborrrrrrrr!
