Healthy salmon and quinoa burgers

As usual, a simple recipe even if you have to chop some ingredients.
INGREDIENTS: ( for 4-6 units)
- 400 gr salmon (ask the fishmonger to give it to you clean, skinless and boneless, in loins)
- 1/2 cup boiled quinoa
- 1 egg
- 1 handful of nuts: walnuts, cashew nuts, almonds, or one type only
- 1 dessert spoon of soy sauce
- 1 handful of fresh parsley
- 1/2 spring onion
- Extra virgin olive oil
- Salt
- Pepper
- Fresh or pickled red onion
- Hamburger bun
- 4 tablespoons mayonnaise
- A few drops of Tabasco ( to taste)
- One dessert spoon of soy
- Sesame
RECIPE ELABORATION STEP BY STEP:
- The first thing to do is to wash the quinoa well under the faucet until it stops foaming, then boil 2 cups of water, add a teaspoon of salt and the quinoa and leave over medium heat until all the water is absorbed, about 15 minutes approximately. Cover and let cool.
- Then cut the onion into small squares, put a little olive oil in a frying pan, add the onion and a pinch of salt and poach over medium low heat for about 15 minutes. Set aside.
- If the fishmonger can remove the skin of the salmon and the central bone, all the better. Now all that remains is to cut it into small pieces. You can also chop it in a food processor, but be careful not to get too much paste.
- Chop a handful of parsley leaves, and a handful of nuts.
- In a bowl put the salmon, one egg, the parsley, the nuts, a little sauce and pepper and stir until the ingredients are well integrated.
- Add the boiled quinoa and stir. Now it's time to make the hamburger shapes with well washed hands. If you see that you have been very juicy, add more quinoa, if on the contrary you see that it has become very dry and does not stick when making the forms, add half an egg and try and if not add it whole.
- For the sauce, just mix 4 tablespoons of mayonnaise, a few drops of Tabasco (depending on how spicy you like it), a teaspoon of soy and stir. Add a little bit of sesame and that's it, see how easy it is?
- Finally, in a frying pan, put a few drops of oil, heat over medium-high heat, and sear the hamburgers on both sides until lightly browned.
- Now all that's left to do is to assemble them! Put on a hamburger bun a little bit of sauce, some lettuce leaves, the hamburger, a little bit of poached onion, another little bit of sauce and some pickled or fresh red onion.
