Homemade codfish fritters

The homemade codfish fritters, They are a delight and are easier to make than they look. Similar to croquettes in shape, but they are fluffier and if they are well made, they are like cod-flavored clouds.

They provide us with a lot of protein through eggs and cod, in addition to all the benefits that fish provides us with and in particular cod: rich in minerals such as Zinc and Phosphorus, proteins, Selenium and Vitamin D, all these nutrients are involved in functions such as concentration, improvement and intellectual performance.

  • 250 gr of boiled potatoes ( approx.2 medium potatoes)
  • 250 gr of crumbs of desalted cod*.
  • 1 clove garlic
  • 1 medium onion
  • 60 gr flour (about 3 heaping tablespoons)
  • 1 egg
  • Some fresh parsley leaves
  • Salt and pepper
  • Extra Virgin Olive Oil
STEP BY STEP RECIPE:
  1. Peel the garlic clove and the onion and chop it very fine. If you have a food processor, chop it for 10 seconds at speed 5-6.
  2. Add 3 tablespoons of oil in a frying pan or in the food processor and sauté over medium heat for 10 minutes, if in the food processor at speed 1 and 120ºc.
  3. Add the crumbled cod and stir, cook for 1 minute in the pan. Then add the flour and toast or cook for two minutes stirring well so that everything is integrated. If you use a food processor, add the desalted cod* and blend at speed 7, four seconds and cook for 1 minute at spoon speed or one, 120ºc . Then add the flour and another two minutes.

* If you buy salted cod in pieces or crumbs, first you have to rinse it with water to remove the salt and leave it in a bowl with water for an hour and renew the water 3 or 4 times during the day to desalinate it. Then it is important to strain it and let it dry so as not to add excess water to the recipe.

  1. Remove from the frying pan into a bowl and add the egg, a pinch of salt and pepper, the cooked potatoes in pieces and the finely chopped parsley. Mash the potatoes a little with a fork and then beat everything with a whisk until you get a paste with small pieces of cod and potato. If using the food processor, add everything and mix for 4 seconds at speed 4-5.
  2. Heat a good amount of olive oil in a frying pan. With the help of a soup spoon, take a quantity and shape it into an oval or round croquette, as you like. It will also depend if the dough is thicker or thinner. With the oil very hot, fry the fritters until golden brown and place them on absorbent paper.
