Seafood noodles with vegetables

Do you want something warm in this cold weather? These seafood noodles with vegetables, I hope you like them! In addition, we can take advantage of some vegetables that we have in the fridge loose, or fish bones from Christmas that we have frozen to make the fumet. INGREDIENTS (4 pax):
  • 250 gr of noodles nº 4
  • Fish fumet (approx. half liter)
  • Vegetables: one zucchini, one carrot and one onion.
  • 300 gr. of monkfish cubes
  • 12 mussels or clams or clams
  • 200 gr of shrimp
  • Sprig of fresh parsley
  • Olive oil
  • Salt
STEP BY STEP RECIPE:
  1. In a frying pan put a good amount of olive oil, heat, pour the noodles and brown them. Drain and set aside.
  2. Cut the vegetables into julienne or long thin strips with the help of a peeler. Fry the vegetables in the oil left over from the previous step with a pinch of salt. Then add the monkfish cut in cubes and fry it all for 3 minutes.
  3. Meanwhile, in a saucepan, we will have brought the fumet to a boil, and we will have boiled the noodles for the time indicated by the manufacturer. Also, in another saucepan, we will have thrown the clean mussels with a bay leaf and two slices of lemon, we will have covered with a lid and put the high fire so that the mussels open with the own steam. Then we remove the shells and reserve them. If you use clams or clams, you can put them in the same pan after frying the monkfish and heat for a few minutes until they open.
  4. With the help of a skimmer, add the noodles to the pan with the rest of the vegetables and monkfish, with a little broth, and stir with a spatula to mix everything well. Add the prawns, which will be done in a minute, and place the mussels on top, sprinkle with a little chopped fresh parsley and ready!
