Homemade spring rolls with meat and vegetables

At home, we love oriental food and my daughters especially love the homemade spring rolls with meat and vegetables.

They are not so complicated to make, and you can fill them with whatever you like, just vegetables, with chicken or shrimp instead of minced meat, even with cheese and spinach for example, or even make them sweet (but that would not be typical Chinese). The following is the best known version:

INGREDIENTS: (12 pieces)

  • 12 wafers for rolls
  • 300 gr of pork minced meat
  • 1 clove garlic
  • 1 spring onion
  • 50 gr of Chinese cabbage or fresh bean sprouts
  • 1 carrot
  • A cube of fresh ginger
  • Soy sauce
  • Olive or sunflower oil
  • Salt
  • Pepper

STEP BY STEP RECIPE:

  1. The first step is to make the stuffing, which is a stir-fry of the ingredients. In a frying pan heat a little oil and brown the garlic and ginger very chopped.
  2. Then add the spring onion and the julienned carrot (cut into thin strips) and poach for about 8 minutes over low heat.
  3. Add the minced meat with a little salt and pepper, stir and fry everything together for 5 minutes over medium heat. Add 3 spoonfuls of soy, stir and leave for 5 minutes more, until all the liquid of the sauce and the water that the meat may have released evaporates. Taste and correct the salt if necessary.
  4. While the meat is cooking, cut the cabbage into very thin strips and add them to the meat when it is cooked and stir. You can also add fresh bean sprouts. Both the cabbage and the sprouts will give the rolls a crunchy touch.
  5. Now it is time to roll the rolls. Place a wafer on a clean worktop. Put a spoonful of filling on the bottom of the wafer about 3 cm from the bottom edge and leaving a margin on each side of another 4 cm and roll up the wafer a little covering all the meat. Now fold each side, both right and left, inwards and finally roll the roll completely upwards. Just at the end, with a finger dipped in water or beaten egg white, or with a brush, moisten the top edge and finish rolling. It will serve as glue to fix the wafer and seal it.
  6. In a large frying pan, put a large amount of oil and heat. When it is very hot (without smoking) add the rolls, separated from each other, so that they do not stick together and brown them on both sides.
  7. Remove them to a plate with absorbent paper and serve hot!

At home these homemade spring rolls with meat and vegetables We serve them with soy sauce, but as in restaurants, you can serve them with a bit of sweet and sour sauce.
