Homemade rice with lobster

This homemade rice with lobster is one of those recipes to be enjoyed quietly in good company, without haste and with a good wine, to celebrate something special or just to share it with friends.

It is not as difficult as it seems, what is more complicated is to get hold of good, fresh lobsters, if possible.

INGREDIENTS: ( 4 persons)Homemade rice with lobster
  • 1 breakfast cup of bomba rice
  • 2 lobsters
  • 3 cups fish or seafood broth
  • 4 ripe red tomatoes
  • 1/2 red bell pepper
  • 1 Italian green bell pepper
  • 2 medium scallions
  • 3 chili peppers
  • 2 black peppers
  • 1/2 teaspoon saffron
  • Extra virgin olive oil
  • Salt and pepper
STEP BY STEP RECIPE:
  1. The first thing to do is to peel the garlic and onions, wash the peppers and tomatoes and soak the peppers.
  2. Finely chop the garlic and dice the onions and peppers.
  3. Heat 5 tablespoons of olive oil in a large casserole or paella pan. Salt and pepper the lobsters, Cut the fish in halves, or in pieces, as you prefer. Mark on the grill, on the side of the skin, over high heat until lightly browned. Remove and reserve.
  4. In the same oil, and over medium heat, first brown the garlic, being careful not to burn it, and then add the onion with a pinch of salt, and the homemade rice with lobsterchili peppers and simmer over medium heat for 5 minutes.
  5. Add the peppers with another pinch of salt and sauté for another 5 minutes.
  6. Then grate the tomatoes and add them to the casserole, turn up the heat and cook until the juice released by the tomatoes evaporates.
  7. In the meantime we remove the tail from the ñoras, open them and remove the seeds with the help of a spoon. Now it is time to remove the flesh of the ñora that is attached to the skin. To do this, with the same spoon we press the side against the skin and slide to remove the flesh, little, but of an intense flavor and color. With two ñoras we will have obtained a half teaspoonful. We add it to the sauce with the saffron and stir.
  8. Heat the fish or seafood broth, either homemade or purchased, which are sold very good and natural.
  9. Now it is time to add the rice. Stir to mix it well and soak it with the sauce. Then add the broth. If what you want is a loose rice, but dry, add three cups of broth (for a measure of bomba rice, there are three cups of liquid). If on the contrary you prefer a brothy rice, add 5 to 6 cups of broth. Turn up the heat and cook over medium-high heat for 10 minutes, then 8 minutes over medium-low heat.
  10. When 13, i.e., 5 minutes are left, place the lobster, The rice can be cut into pieces, or in halves as in the photo, depending on how you cut them. It will cook together with the rice and will add a delicious flavor.
  11. At the end of the time, let stand for a few minutes and serve hot.
