Sweet potato and onion omelet

I propose a much quicker recipe that is also very tasty. Although the caloric content of the sweet potato is slightly higher than that of potato, it has more fiber, more calcium, more potassium and vitamin C, as well as beta-carotene. (and its antioxidant properties), as well as considerable amounts of B vitamins.

INGREDIENTS: (4 skewers)
- 700 gr of sweet potato
- 1 medium chive
- Virgin olive oil
- 6 eggs
- Salt
- Pepper

- First wash the sweet potato, and with skin on, cut it into pieces about two fingers thick (about 2 cm). Cover the bowl with plastic wrap and put it in the microwave, 7 minutes at high power.
- Peel and chop the spring onion in brunoise (small dices). Pour about 4 tablespoons of olive oil (if it is virgin) in the pan, and fry the onion for about 7 minutes over medium heat with a pinch of salt.
- In a bowl, beat the eggs with a pinch of salt.
- Take out the sweet potato, carefully remove the paper, and peel the sweet potato when it is not too hot. Cut into small pieces and add to the pan with half a teaspoon of salt and fry a few more minutes all together. Add it to the bowl with the eggs and stir well.
- In the frying pan pour a pinch of oil, heat over high heat and pour the mixture. A trick (only if the frying pan is non-stick) is to stir immediately with a spatula (this makes it cook faster and evenly). Lower the heat to medium, leave it for a couple of minutes and turn it over. The cooking time depends on the thickness and how juicy you like it.
