Pork tenderloin with apricot sauce and glazed onions

Do you have some open jams in the fridge? Let's take advantage of them to make this pork tenderloin with apricot sauce and glazed onions. In this case, I have used apricot but it could be raspberry, orange, fig....

Do you like sweet and sour dishes? At home we love them, plus you can fill your meat dishes with flavor and vitamins in a very healthy way, by simply adding fruit.

INGREDIENTS:Pork tenderloin with apricot sauce and glazed onions
  • 1 pork tenderloin
  • 3 tablespoons of apricot jam
  • 12 green onions
  • 8 apricots natural or dehydrated
  • 1/2 liter of beef broth
  • 1 tablespoon butter
  • 1/2 teaspoon thyme
  • Brandy
  • Aove ( extra virgin olive oil)
  • Salt
  • Pepper
STEP BY STEP RECIPE:Pork tenderloin with apricot sauce and glazed onions
  1. The first thing to do is to season the sirloin with salt and pepper. In a pot we put a dash of oil, heat over medium heat and brown the tenderloin on all sides, that is to say, what is called ”sealing” the tenderloin. This means to create a small crust that serves so that when cooking it, the juices do not come out and in this way the meat will be more tender and juicy, because if they came out the meat would be very dry.
  2. Remove the fillet and set aside. In the same oil, and if there is little or none, add another little bit, brown the onions over medium heat.
  3. Add the apricots, if they are fresh, peeled and halved, or whole if they are dehydrated. Add the jam, stir and place the tenderloin.
  4. Add a splash of Brandy, turn up the heat and let the alcohol evaporate.
  5. Cover with the broth (depending on the size of the pot, the sirloin will be more or less covered, therefore, it will be necessary to turn it over halfway through cooking). Add the thyme and another pinch of salt and cook over medium heat for about 20 minutes (it will always depend on the size and thickness of the sirloin).
  6. After this time, you can cut the sirloin a little to see if it is done and if it is still very pink let it cook for a few more minutes. The idea is for it to be slightly pink. Remove the sirloin.
  7. Add the butter to the sauce, stir, and if the sauce is too liquid, let it cook for a few minutes to reduce and thicken a little. Taste and add more salt if necessary.
  8. Slice the sirloin, drizzle with the sauce and serve with onions and peaches (some will be half-done).

Looks great, doesn't it? This pork tenderloin with apricot sauce and glazed onions is delicious and is a different way to present it. Eating it with some couscous, rice or quinoa completes the meal of the day and is enjoyed to soak up the sauce.
