Beef, rice and vegetable burritos

If you like burritos, this recipe from beef, rice and vegetable burritos You will love it, besides being a very nutritionally complete dish, with protein, carbohydrates and the necessary portion of vegetables.

The flavor is incredible, and the mixture of everything is a delight. If you like Mexican food, you have to try to make them and you decide how spicy you want to make them, are you up for it?

Beef, rice and vegetable burritos

INGREDIENTS: (4 burritos)

  • 4 wheat or whole wheat wrap tortillas
  • Burrito seasoning
  • Tomato dip sauce
  • 8 slices of jalapeño peppers
  • 200 gr of minced meat
  • 100 gr of boiled rice
  • 1 spring onion
  • 2 cloves garlic
  • 1 Italian green bell pepper
  • ½ red bell pepper
  • Fresh coriander leaves 
  • Salt and pepper
  • Olive oil

STEP-BY-STEP PREPARATION:

  1. First we chop the garlic cloves, the spring onion and the peppers.
  2. In a large frying pan pour 3 tablespoons of oil, heat and fry the above, over medium heat until poached, about ten minutes with a teaspoon of salt.
  3. In the meantime, boil the rice in plenty of salted water for 18 minutes, drain and reserve.
  4. Season the minced meat with salt and pepper and add it to the sauce, stir and add two spoonfuls of seasoning. Cook for 5 minutes, add 2 tablespoons of tomato sauce, stir and cook for another 5 minutes. 
  5. Mix with the rice.
  6. Now all that is left is to fill the wraps. Put some cilantro leaves and a couple of jalapeños (optional) and close the wrap like an envelope: first the right side, covering part of the filling, then the bottom side up, then the left side and finally roll the roll from bottom to top, pressing lightly. It can also be done by folding the bottom side up first, wrapping the filling, then the sides and roll up.
  7. We finish if we want to give them a touch of heat and brown them in a frying pan and serve them cut in half with fresh garnish, for example a rich tomato, avocado and onion salad or some OEP sauce, such as sour cream, tomato sauce or cheese sauce.
