Whole wheat cucumber and egg sandwich

If you're in the mood for a light and fresh dinner, this whole wheat cucumber and egg sandwich is a quick idea, very easy to make and super tasty.

It is also a sandwich that provides a lot of fiber, vitamins, protein and slow assimilation carbohydrates.

A very healthy option for any meal of the day!

Whole wheat cucumber and egg sandwich

INGREDIENTS: (4 sandwiches)

  • 8 slices of whole wheat seed bread or similar
  • 2 hard-boiled eggs
  • 1 cucumber
  • For the homemade mayonnaise: 1 egg, salt, a dash of lemon and olive oil.

  1. The first thing we will do is the homemade mayonnaise. Put in a bowl for the blender, an egg, a pinch of salt, a splash of lemon juice, and 2 tablespoons of olive oil. Put the blender on the bottom and start blending. After a few seconds and while continuing to whisk, start adding olive oil in drizzles, until the mayonnaise thickens. The more oil you add, the thicker it will be. Taste it and add more salt and/or lemon to taste.
  2. Cook the eggs in boiling water for 12 minutes. When cool, remove the shell and cut into slices.
  3. Wash the cucumber, if it has very thick skin peel it or if not, leave it and cut it into slices.
  4. Spread the toasted or untoasted bread with mayonnaise, place alternate slices of cucumber and eggs and add more mayonnaise to taste. You can optionally add some basil, arugula or lamb's lettuce leaves.
