Light cheesecake and oatmeal ginger cake

A light cheesecake and oatmeal ginger cake, is what we need to give a boost of healthy energy to our day. Because this cake is made with healthy ingredients and no added sugars, and the ginger gives us that spicy touch that wakes up our body without the need to fill us with calories.

It is a cheesecake, something different, to which you can give the spicy and aromatic touch you want, adding more or less ginger, which also combines very well with the crunchy muesli base.

Do you dare to try it?

INGREDIENTS: (for two mini cakes or one large one)
  • 60 g of muesliLight cheesecake and oatmeal ginger cake
  • 2 tablespoons of honey
  • 1 tablespoon of milk (the one you like the most)
  • 2 dessert teaspoons coconut oil
  • 120 g evaporated milk
  • 400 gr light cream cheese
  • 4 heaping tablespoons of erythritol
  • 4 sheets of gelatin in small slices (6.7gr)
  • 2 dessert teaspoons of powdered ginger
  • 40 ml of water
  • Juice of 1/2 lime
  • Raspberries, blackberries and blueberries
STEP BY STEP RECIPE:
  1. The first step is to have on hand two 12 cm diameter hoops and Ginger Oatmeal Cheesecakeline it with plastic wrap and place it on a plate. If you don't have them, make it in a round mold of 20-22 cm in diameter.
  2. Lightly grind the muesli (we do not want to obtain a powder, but a sandy texture). You can use the one you like the most, even the one with nuts or fruit added. Add the milk, coconut oil and honey and stir until a paste is formed. Spread this paste in the bottom of the ring (and several rings if you use smaller ones). Reserve in the refrigerator.
  3. Soak the gelatin sheets in cold water. Then heat 40 ml of water in the microwave. Drain the gelatin we had in the water by hand and introduce them into the hot water, stirring to dissolve them.
  4. In a mixer, mix the cream cheese, condensed milk, ginger (if you like stronger flavors, add three teaspoons instead of two), juice and dissolved gelatin. Beat until a smooth and homogeneous cream is obtained.
  5. Pour over the muesli base in the ring and let it cool a little and then put it in the refrigerator for at least 5 hours.
  6. Remove the ring upwards and then carefully remove the plastic wrap.
  7. Garnish with crunchy oat flakes, raspberries, mango slices, etc. Whatever you like!
