Marinated quail salad with citrus fruits

This salad of pickled quail with citrus fruits is simply a delicacy. With inexpensive ingredients, it is a very elegant recipe that is not difficult to prepare and will provide you with high quality low-fat protein and various minerals and vitamins from the vegetables.

Marinated quail salad with citrus fruits

In a previous post I explained how to make pickled quails. Click here to see the recipe. As it is a marinade, this recipe will last for many days in the fridge if you keep them in an airtight jar.

Now all you have to do is assemble the salad, which is done in two minutes.

Ingredients:

  • 4 quails
  • 5 shallots
  • 2 carrots
  • 1 spring onion
  • 4 cloves of garlic
  • 125 ml extra virgin olive oil
  • Salt
  • 125 ml apple cider vinegar or wine vinegar
  • 70 ml of white wine
  • 70 ml of dry sherry *If you don't have it, double the amount of white wine.
  • 50 ml of water
  • 2 bay leaves
  • 10 peppercorns
  • A sprig of parsley and fresh thyme
  • Oak lettuce
  • 1 orange
  • 1 handful of walnuts
  • 12 red or colored cherry tomatoes
  • Optional: 6 raspberries, or 6 cherries or half a pomegranate

Recipe elaboration step by step:

  1. First we make the pickled quail, whose recipe can be found by clicking here.
  2. When they are done, remove and let them cool. Then we are going to split them into small pieces, removing the legs that can be removed by hand, pulling them slightly, they will come out very easily. Then with the help of a knife we can remove the breasts and the rest of the meat if there is any.
  3. Wash some oak lettuce leaves well and a little salt. Put them in a nice salad bowl, and spread on top: the quail meat, the raspberries, or cherries pitted in half, or half pomegranate seeds, some chopped walnuts, and the orange peeled and cut into pieces as evenly as possible so that it is well presented.
  4. Finally, as a dressing, use the juice of the marinade itself. Sprinkle on top and this exquisite dish is ready. salad of pickled quail with citrus fruits.
