Salad of smoked meats and picot vinaigrette

This salad with smoked meats and picot vinaigrette is an explosion of flavors and freshness. It's also fresh and packed with nutrients, vitamins, protein, fiber and healthy omega-3 fats.

The picotas, or cherries if you prefer, will give it that sweet and sour flavor that contrasts with the smoked fruits and makes this salad a delight.

It is made very quickly, you only have to make the vinaigrette, so a turmix will do.

INGREDIENTS: ( 2/ 3 servings )
  • 18 picotas or cherries
  • 70 ml of AoveSalad of smoked meats and picot vinaigrette
  • One tablespoon vinegar
  • 1/2 teaspoon salt
  • 1 bag of mixed lettuce sprouts
  • 100 g smoked salmon
  • 100 gr of smoked codfish
  • A handful of cashew nuts

RECIPE ELABORATION STEP BY STEP:
  1. Wash and remove the stone from the picotas and cut in half.
  2. Put a dozen in a blender, together with the oil, vinegar and salt. Blend until a sauce is obtained.
  3. Crush the cashew nuts into small pieces, or the nut that you like best, it also looks great with walnuts, pistachios, hazelnuts,,,, Crushing them with a large knife you will get it.
  4. To plate it you need a cooking ring, but if you don't have one, put it in a normal salad bowl. Put the ring on a plate, fill it almost to the top with lettuce sprouts and drizzle with a little vinaigrette.
  5. Cut the smoked meats into strips one centimeter thick, and place on top of the lettuce. Then put a few nuts, a couple of picotas in half and sprinkle with the vinaigrette.
