This squid fideuá made in the garden, is a great idea to eat with family or friends on good sunny days that we have so many in Spain.

I am delighted with my gas paella pan, because it has 3 rings of different sizes and therefore it is suitable for me to make paellas or fideuás with various sizes of paella. This would be the small one and gives me enough for 4 or 6 servings.

INGREDIENTS: (4 rations)

  • 250 gr of thick noodles or the special noodles for fideuá
  • 800 gr fresh squid
  • 3 cloves garlic
  • 2 spring onions
  • 1 Italian green bell pepper
  • 50 ml dry white wine
  • 4 tablespoons homemade tomato sauce
  • 2 and a half cups of fish broth (if it is homemade, better)
  • Half teaspoon sweet paprika
  • A pinch of saffron (optional)
  • Virgin olive oil
  • Salt

STEP-BY-STEP PREPARATION: (click to see the video recipe)

  1. The first thing we will do is to put a good splash of virgin olive oil in the paella pan and we will brown the squid (you can also use cuttlefish) that we will have cleaned and cut into small pieces. Sauté over medium-high heat for about five minutes and remove to the edges of the paella.
  2. In the meantime we cut some garlic cloves very finely, the spring onions and an Italian green bell pepper into small pieces.
  3. Then we are going to poach all the vegetables in the center of the paella with a little salt for about 10 minutes over medium-low heat, so that it does not burn.
  4. Turn up the heat and pour in the wine and let it heat up.
  5. Lower the heat a little more and add the paprika and saffron to toast a little but without burning, otherwise it will produce bitterness.
  6. We raise the heat to medium. Add the homemade tomato sauce and stir everything.
  7. Then add the noodles and another pinch of salt (test to rectify) and stir again so that the flavors are well integrated and the noodles are a little toasted.
  8. Pour the hot broth (important) over the noodles and cook over medium heat for about 12 minutes or until the broth is absorbed. The doneness of the noodles depends on the cooking time of the noodles, according to each manufacturer and also on how high or low the heat is. For that reason sometimes it is not exact neither the time of cooking nor the quantity of broth.
