Turkey with curry sauce and mango

Whether it's almost autumn or any season, I love to use fruits in my recipes, I love sweet and sour! turkey with curry sauce and mango is proof of this, a very tropical and exotic recipe, which with a delicious salad and a glass of fresh white wine is a delight! Do you want to try it?

INGREDIENTS: ( 4 pax)
  • 600 gr of ragout of turkey or chopped breastTurkey with curry sauce and mango
  • 200 ml of ideal milk or coconut milk
  • 150 ml chicken broth
  • 1 large spring onion
  • Medium handle grande
  • 1 clove garlic
  • 10 gr fresh ginger
  • 2 teaspoons of curry powder
  • 1 glass of couscous
  • 1 glass of chicken broth
  • Virgin olive oil
  • Salt
  • Cashew nuts (optional)
  • Mint leaves or coriander leaves
STEP BY STEP RECIPE:
  1. We cut the turkey if the butcher has not done it for us, diced about 3 cm approximately. Add salt and pepper. In the frying pan pour a dash of olive oil and brown the turkey for about 5 minutes. Remove, leaving the rest of the oil in the pan, and set aside.
  2. Chop the onion, garlic and ginger in brunoise (in small squares). Add the onion, garlic and ginger to the remaining oil in the frying pan and cook over low heat with a teaspoon of salt. curry and stir. Leave over low heat for 7-10 minutes.
  3. Peel and chop half handle and mix it with the rest. Fry for 3 more minutes.Turkey with curry sauce and mango
  4. Add the broth, turn up the heat so that it makes chup-chup and stir. Lower the heat to medium and add the ideal milk or coconut milk and stir occasionally for 5 minutes.
  5. We pass this sauce through the blender until there are no lumps. Taste and correct the salt if necessary.
  6. Pour the sauce back into the pan and the turkey. Stir everything and let the turkey soak in the sauce over medium heat for 5 minutes. If the sauce is too runny, you can leave it to reduce it (let it evaporate) for a few more minutes.
  7. While this last step is being done, boil a glass of chicken broth. Pour into a bowl a glass of couscous, Add the chicken broth with a pinch of salt and a drizzle of olive oil and cover for about 5 minutes (until the broth is absorbed). Remove the lid, add another drizzle of oil and with a spoon and with a lot of care stir it so that it becomes loose. Add some chopped mint leaves and some chopped cashew nuts.
