Vegetable and shrimp nems with soy mayonnaise
At home, we love oriental cuisine, and these vegetable and shrimp nems with soy mayonnaise it is an improvised version with little things I had in the fridge and the mayonnaise with soy was an addition, since the times I have tried them in restaurants they didn't have any, but the truth is that it is delicious!
INGREDIENTS: (for 14 wafers approx.)
- small rice wafers
- 2oo gr. shrimp
- iceberg lettuce
- 1 grated carrot
- 1 avocado
- 1/2 mango
- fresh coriander leaves (optional)
- 1 egg
- dash of olive oil
- lime
- 2 tablespoons soybeans
- 1 teaspoon mirin
- sunflower oil
- salt
- sesame
STEP BY STEP RECIPE:
- In a frying pan, sauté the peeled shrimp over high heat for 3-5 minutes. Set aside.
- Cut the lettuce and cilantro (if you don't like it, leave it out) into thin strips and grate the carrot and put it in a bowl.
- Peel the mango and cut the flesh leaving the stone aside. On a board cut half a mango into small pieces. Put it in the bowl together with the above.
- Cut the peeled and pitted avocado into small squares and sprinkle with a little lime or lemon juice. We also put it in the bowl.
- Add the shrimp to the bowl with the rest of the ingredients and stir with a spatula to mix everything well.
- We make a homemade mayonnaise. For this we use an egg, a squeeze of half a lemon or a lime, a pinch of salt and soy and mirin (if you do not have it or do not find it is not essential) that we will put in a container for the turmix. Whisk and add sunflower oil little by little until it thickens.
- Add 3 or 4 tablespoons of the mayonnaise (to taste) to the mixture of ingredients and stir.
- Now it's time to dip the wafers one by one in a bowl of hot water. When they are soft, remove them with your hands, shake off the water and place them on a clean cloth and stretch them, as they will be very sticky, and in a moment the water will be absorbed and you can place a little filling (about a spoonful) on the bottom. Fold each end right and left over the filling and then roll it upwards. Repeat until you run out of filling.
- Sprinkle some sesame seeds on top and some coriander leaves and they are ready to eat!
These vegetable and shrimp nems with soy mayonnaise are a cold dish that makes a great starter or even a very light and healthy dinner. Use your imagination and combine them with various fillings such as roast chicken and vegetables, pork or duck with red onion and pineapple, etc. Cooking is a game, a challenge, use your imagination and never throw away what you have leftovers in the fridge!
