Chicken and cheese enchiladas

If you like Mexican food, these chicken and cheese enchiladas You will love them, they are very easy to make and delicious. A great recipe for the family and for a dinner with guests.

Chicken and cheese enchiladas
INGREDIENTS: (4 units)
  • 4 corn and wheat tortillas
  • Mild tomato sauce
  • Sour cream or sour cream sauce
  • 8 slices of jalapeños
  • 400 gr chicken breast 
  • 140 gr cheddar cheese
  • Fresh cilantro 
  • 2 limes 
  • 2 tablespoons olive oil 
  • Salt and black pepper 
STEP-BY-STEP PREPARATION:
  1. First put a couple of tablespoons of oil in a frying pan and heat over medium heat. Season the breasts with salt and pepper, put them in the pan, cover and let them cook for about 15 minutes, turning them from time to time. It will take more or less time to cook depending on the thickness of the breasts. In this recipe you can use the leftovers of a roasted chicken, or you can also boil the breasts with water and salt.
  2. Preheat the oven to 200ºC.
  3. Once ready we are going to break up the chicken meat with a fork, like shredding the meat, or you can also chop it with the help of a food processor.
  4. Finely chop a handful of cilantro leaves and the jalapeños and coarsely grate the cheddar cheese.
  5. Put the chicken in a bowl with 70 grams of cheese, cilantro and jalapeños, 100 grams of tomato sauce and stir. This will be our filling.
  6. Grease a baking dish with a little oil. 
  7. Fill each tortilla and wrap as if it were a roll and put them in the dish with the zipper down. Cover all the tortillas with another 100 gr of tomato sauce and finally sprinkle the remaining cheese.
  8. Cover the dish with aluminum foil and bake for 20 minutes, and another 5 minutes without the foil, until lightly browned.
