If you're bored of the same old salads, try this one. zucchini, arugula, poached onion, cranberries and nuts salad. It is an explosion of flavors, textures and full of vitamins and antioxidants.

INGREDIENTS: (2 portions)
- 1 zucchini
- 1 bag of arugula
- 2 onions
- 1 handful of hazelnuts
- 100 gr of blueberries
- Extra virgin olive oil (Aove)
- Salt
- Pepper
- Sesame seeds
- Sauce: 2 tablespoons of Aove, 2 tablespoons of soy, 1 teaspoon of Dijon mustard.
STEP-BY-STEP PREPARATION: ( click here to see the video–recipe)
- Peel and cut the onions into strips. Put a couple of tablespoons of olive oil in a frying pan and cook the onion with a little salt over medium heat for about 10 minutes, until you see that it is transparent.
- Wash the zucchini, cut the top and bottom and with the help of a peeler, cut strips or ribbons from top to bottom. The first ones will be narrower than the next ones but you can use all of them. Put in the same pan another little bit of oil and over high heat sauté the ribbons for a couple of minutes, so that they get crispy. Turn off the heat and add a little salt.
- In a plate put the arugula, around it the poached onion and on top the ribbons. Add the cranberries and hazelnuts and/or nuts that you like or have on hand, a little sesame and freshly ground pepper.
- The only thing missing is the sauce, which is as simple as putting the soy, mustard and oil in a bowl and stirring with a spoon until it emulsifies. Drizzle over the salad.
