Homemade Ajoblanco with melon and without bread

INGREDIENTS: ( 4 servings)
- 500 g of cut melon
- 120 g cashew nuts
- 40 g extra virgin olive oil
- 30 ml apple cider vinegar
- 50 ml of water
- 50 gr ricotta
- 1 small garlic clove without germ
- 4-6 fresh basil leaves
- Salt and pepper to taste
- For decoration (optional):
Chopped grapes, smoked sardines and oil and pepper drops

- Put all the ingredients in a blender or food processor and beat well until the cream is creamy.
- Let it cool in the refrigerator for at least 4 hours so that it is very fresh.
- When serving, add some chopped grapes and a few pieces of smoked sardines and it is really tasty, as it gives a crunchy touch and a salty flavor that contrasts with the delicious semi-sweet flavor of the crama.
