Homemade Ajoblanco with melon and without bread

In addition, it is somewhat lighter, since it does not contain bread, it is a gluten-free recipe, and it has less olive oil, so it is less caloric.

INGREDIENTS: ( 4 servings)
  • 500 g of cut melon 
  • 120 g cashew nuts
  • 40 g extra virgin olive oil
  • 30 ml apple cider vinegar
  • 50 ml of water
  • 50 gr ricotta
  • 1 small garlic clove without germ
  • 4-6 fresh basil leaves
  • Salt and pepper to taste
  • For decoration (optional):
    Chopped grapes, smoked sardines and oil and pepper drops

  1. Put all the ingredients in a blender or food processor and beat well until the cream is creamy.
  2. Let it cool in the refrigerator for at least 4 hours so that it is very fresh.
  3. When serving, add some chopped grapes and a few pieces of smoked sardines and it is really tasty, as it gives a crunchy touch and a salty flavor that contrasts with the delicious semi-sweet flavor of the crama.
