Cream of carrot and mandarin cream with shrimp

This carrot and mandarin cream with shrimp and a touch of ginger, pomegranate seeds and capers is an explosion of flavor and textures. 

In addition, it is a very healthy recipe because of its high content in vitamin C, strengthens our immune system, helps us to absorb iron, and maintains our tissues as it participates in the formation of the collagen and it is antioxidant, i.e., it fights free radicals by slowing down the aging process.carrot and mandarin cream with prawns aging. 

Finally, the shrimps, or they could also be prawns or grilled langoustines, provide protein and the “special” touch for this Christmas.

INGREDIENTS: (for 4 servings)

  • 600 gr of carrots
  • Juice of 2 tangerines 
  • 8 shrimp
  • 1 onion
  • 1 small piece of 2 cm of fresh ginger
  • 750 ml chicken or vegetable broth
  • 1 teaspoon salt
  • Black pepper
  • Aove
  • 1 pomegranate
  • Capers
  • Chives
  • Optional: avocado

STEP BY STEP RECIPE:

  1. The first thing to do is to peel the onion and ginger, chop it and poach it in a pot with a couple of tablespoons of Aove and a pinch of salt for 5 minutes.Cream of carrot and mandarin cream with shrimp
  2. Meanwhile, peel and cut the carrots into small pieces. Add them to the pot and sauté for another 5 minutes. 
  3. Add the broth, half a teaspoon of salt and cook over medium heat until the carrots are soft, about 15 minutes.
  4. In the meantime, peel the pomegranate and reserve the grains. We also peel the shrimps in case we have not bought them already peeled (they sell very good ones already peeled and frozen).
  5. We pass everything into a blender or turmixer, add the juice of the two tangerines sy we grind it until it is very fine and creamy. If it is too thick, you can add a little more broth and if it is too runny, pour it all back into the pot and let it reduce until you have the consistency you like. Taste and adjust the salt if necessary.
  6. Season the peeled shrimps with salt and pepper. In a frying pan add a few drops of olive oil, heat and sauté for 1 or 2 minutes.
  7. Now all that remains is to plate it: put some cream in a deep dish, a couple or three shrimps in the center. Then we distribute on the plate some pomegranate seeds and capers, some chives, a little black pepper and a drizzle of Aove, and optionally, which is very tasty, some avocado cubes.
