This traditional pork ribs stew marinated with potatoes is one of those dishes of my childhood memories, of being together as a family, of winter days when the spoon was the most appetizing and grateful, even if it was a simple and economical dish like this one, but it is very good and also very easy to make.
INGREDIENTS:
- 1/2 kg of pork ribs marinated or fresh, cut into small pieces.
- 1/2 kg of potatoes.
- 2 cloves of garlic.
- Half a green bell pepper.
- Half a red bell pepper.
- 2 onions.
- 2 carrots.
- 1 stick of celery.
- 1 teaspoon of choricero bell pepper meat or 1 teaspoon of sweet or hot paprika.
- 1 tablespoon of homemade fried tomato.
- 1 tablespoon tomato concentrate
- A few sprigs of rosemary and/or thyme.
- 2 bay leaves.
- Water or meat broth.
- Extra virgin olive oil.
- Sal.
- Freshly ground black pepper.

RECIPE ELABORATION STEP BY STEP:
- The first thing we will do is in a pot or pan, with a little olive oil, brown the ribs seasoned with salt and pepper and then remove and set aside.
- Finely chop the garlic and finely dice the onions, celery and red and green bell pepper.
- In the rest of the remaining oil we brown the garlic. Add the chopped vegetables, half a teaspoon of salt, stir and cook over low heat for 12 minutes.
- Meanwhile we peel the potatoes and then we cut them in pieces neither too big nor too small, so that they fit in a spoon for example, and the size is pleasant to take them in one bite. The way to cut them is by snapping them, that is to say that they make noise when cut. We put the tip and some of the side of the knife in the potato and press with the thumb and forefinger on the knife up and split the potato. This will help the potato to release some of its starch and thicken the broth a little. We also peel the carrots and cut them into small pieces.
- Then add the paprika or chorizo bell pepper and the tomato and stir.
- Place the ribs, turn up the heat a little and stir. Add the potatoes and carrots and the water or meat stock, just covering the ribs and add another teaspoon of salt, the rosemary and/or thyme, the bay leaves and let it cook for half an hour over medium heat. Test the salt to see if it needs more and if you see that the water or broth evaporates too much, add another little bit.
