Chicken rolls stuffed with spinach and cheese

These spinach and cheese stuffed chicken rolls is a quick and delicious recipe that is very useful for any dinner or lunch.

In addition, with the filling you can use your imagination or make a recipe for making the most of it: you can use the cheese you like the most or the one you have in the fridge, havarti cheese, cream cheese. And instead of spinach, kale, chard, chard, mushrooms, tomato ... or do it with ham and cheese ...

INGREDIENTS: (4  rations)
  • 4 thin chicken breast fillets
  • 200 gr fresh spinach
  • A handful of pine nuts
  • A handful of raisins
  • 50 gr shredded mozzarella or goat log
  • 1 teaspoon oregano
  • 1 teaspoon cornflakes, panko or bread crumbs
  • Black pepper
  • Salt
  • Extra virgin olive oil
  • 1 lemon or splash of white wine
  • ★ NOTE: you can use the cheese you like the most or the one you have in the fridge, havarti cheese, cream cheese. And instead of spinach, kale, mushrooms, tomato....
STEP-BY-STEP PREPARATION: (click here to see video-recipe)
  1. The first thing to do is to pour 2 tablespoons of olive oil in a frying pan, heat and brown the pine nuts and raisins.
  2. Then add the spinach with a pinch of salt and a splash of water. Cover and cook until they are soft. Remove the lid and let all the water evaporate (optional add some garlic or chopped onion and poach before).
  3. Place a breast spread out on a board, season with salt and pepper, add a little spinach and then some grated or crumbled cheese.
  4. Roll up pressing at the same time so that they are very firm. You can put a wooden toothpick to prevent them from opening during roasting.
  5. Do the same with the rest of the breasts. Place in a dish. Sprinkle a little oil, oregano, a little pepper and breadcrumbs. Finally, add the lemon juice or wine and bake for 15-20 minutes at 180º C in the oven or air fryer.
