Chicken and vegetable samosas with filo dough

INGREDIENTS:
- A jar of extra-fine peas and carrots
- A spring onion
- One chicken breast
- A teaspoon of curry
- A chili pepper (optional)
- 50 ml coconut milk
- Filo dough
- Olive oil
- Pinch of salt.
- Butter
STEP BY STEP RECIPE:
- Cut the onion into brunoise and poach it with a dash of olive oil and a pinch of salt. .
- Add a jar of extra-fine peas and carrots and sauté.
- We chop a chicken breast season with salt and pepper and add to the pan and brown.
- Add a teaspoon of curry and a chili pepper if you want to give it an extra spicy touch and stir. Then add 50 ml of coconut milk and stir until it reduces. Rectify the salt if necessary.
- We cut a strip of filo dough, about 8 cm wide. This dough has 10 very thin layers together. So we separate them two by two. Every two strips together is to make one samosa.
- Place a small amount of dough on the bottom and fold in a triangle shape upwards from left to right, until the entire strip is completed. Each time we close, we brush with butter so that they remain crunchy.
- Bake at 200º C for about 5 minutes or until golden brown.
