Red cabbage Christmas salad with green beans, pomegranate and hazelnuts

This Christmas salad of red cabbage with green beans, pomegranate and hazelnuts with seasonal foods is an explosion of flavors and textures.
I'm sure it will become one of your favorites for the holidays. In addition, it will provide you with lots of vitamins and fiber, it is very digestive and will help you to lighten up a bit the heavy Christmas meals.

INGREDIENTS: (4 /6 servings)
- 8 cherry tomatoes
- 1 pomegranate
- 100 gr of manchego or cured cheese
- 200 gr of cottage cheese , ricotta or burrata
- 400 g of round green beans
- 8 sheets of red cabbage
- 80 g of walnuts and hazelnuts toasts
- 1 bunch of basil
- 3 tablespoons balsamic vinegar
- 6 tablespoons extra virgin olive oil
- A teaspoon of salt
STEP-BY-STEP PREPARATION: (click here to see video-recipe)
- Remove the ends of the green beans, chop them and steam them. I steam them in a microwave-safe container with a little salt for 7 minutes.
- Then put water in a pot, bring it to a boil, add a teaspoon of salt, immerse the red cabbage leaves and cook them for 3 minutes.
- We remove them and pass them through cold water in a colander and let them drain.
- Then we crush the hazelnuts a little and toast them a little in a frying pan over medium heat with a few drops of olive oil.
- Wash the tomatoes, cut into quarters, and set aside.
- We shelled the pomegranate.
- Cut the aged cheese into cubes the size of a dice.
- In a wide and beautiful dish we are going to plate: put in the center the soft ricotta cheese, ricotta or burrata, on top or around the red cabbage cut into julienne strips and around it and the rest of the dish the green beans,
- Top with tomatoes, hazelnuts, pomegranate, cheese cubes and basil leaves to taste.
- Now all that remains is to make the vinaigrette. To do this, put the vinegar, oil and salt in a jar, close it and whisk.
- Drizzle the vinaigrette all over the salad and enjoy!
