This dessert of coconut yogurt with fruits and caramelized seeds you will love it for any time of the year, always taking advantage of seasonal fruit.
Coconut yogurt with caramelized fruits and seeds
INGREDIENTS: for 4 portions
- 40o gr coconut yogurt
- 50 gr of sesame seeds, sunflower seeds and pumpkin seeds
- 4o gr of panela or coconut sugar
- 15 gr organic butter
- 400 gr of seasonal fruit
- Agave syrup or honey
- Optional: fresh mint
RECIPE ELABORATION STEP BY STEP:
- The first thing we will do is caramelize the seeds: put the seeds and the panela in a pan and place over medium heat. Stir and you will see how the panela begins to melt and caramelize.
- Add the butter and stir until melted.
- Put everything on a tray on baking paper well spread out and cool. The caramel will be hard. Break with light blows with a spoon.
- Buy seasonal fruit: now in summer or spring: strawberries, cherries, apricots, peaches, melon and in autumn or winter, grapes, blueberries, some persimmons. All fruit cut into small pieces.
- In dessert bowls put a few spoonfuls of yogurt, the fruit pieces, a few caramelized seeds and a trickle of honey or syrup. If you want to decorate, a mint leaf.
