Salmorejo with zucchini without bread

I call this recipe salmorejo with zucchini without bread, It is thick like a salmorejo but without the addition of bread. The zucchini makes it thicker and it is delicious.

It could also be called gazpacho, as it contains some ingredients that salmorejo does not, so choose for yourself 🙂

INGREDIENTS:

  • 800 g unpeeled vine tomatoes with the top part of the stem removed. 
  • 1 medium zucchini, peeled 
  • 1/2 red bell pepper
  • 1 clove of garlic (I remove the germ)
  • 50 ml Aove (extra virgin olive oil) 
  • Apple cider vinegar to taste ( about two tablespoons)
  • 1 teaspoon salt 

RECIPE ELABORATION STEP BY STEP:

  1. Blend in a blender for 7 minutes, first at low power and then at high speed.Salmorejo with zucchini without bread It will be very airy and creamy, almost like a salmorejo (no water at all). 
  2. Remember to always taste and adjust the salt or vinegar if necessary.
