Wholemeal penne sarde with sardines and anchovies
This Sicilian recipe of wholemeal penne with sardines and anchovies is delicious, tasty and very nutritious.
It is an easy recipe to prepare, with good sardines and canned anchovies, which transports us to the seaside, and provides us with lots of calcium, omega 3, and many vitamins.

INGREDIENTS:
- 1 package of 250 gr of wholemeal penne
- 2 cans of sardines in olive oil
- 1 lanchovy tie
- 1 large spring onion or sweet onion
- A good handful of raisins
- A good handful of pine nuts
- A few strands of saffron
- A splash of white wine
- Some fresh chopped parsley leaves
- 30 gr. bread crumbs
- 2 teaspoons of brown or panela sugar
- 1 lemon
- 3 tablespoons extra virgin olive oil
- Salt and black pepper
RECIPE ELABORATION STEP BY STEP:
- Peel the spring onion and cut it into small cubes. In a casserole put the extra virgin olive oil and add the onion and poach until it takes a golden color, about 10 minutes over medium low heat.
- Add the pine nuts, raisins and anchovies in small pieces and stir.
- Add the canned sardines and then a few strands of saffron and let everything fry slowly for about five minutes more and stir carefully so as not to break the sardines too much.
- Add a little of the pasta cooking water (as we are preparing both at the same time) and a splash of white wine.
- Season with a pinch of salt (remember that anchovies and sardines already have salt) and freshly ground black pepper.
- Finally, manually squeeze the lemon and stir everything well to combine flavors and remove from heat. Set aside to combine with the pasta.
- Chop the fresh parsley and in a clean frying pan add the bread crumbs and two teaspoons of sugar and brown over low heat, being careful not to burn (two or three minutes) until it acquires a toasted color.
- Mix the pasta boiled al dente with the sauce and sprinkle with the breadcrumbs and parsley.
