Homemade squid in its ink

He had been preparing them for a long time and we love them at home. squid in its homemade ink. They are easy to make, very nutritious, and if we accompany them with white rice and a salad, we have a super healthy and very complete meal.

INGREDIENTS ( 4 pax) :baby squid in its ink
  • 2 spring onions
  • 1/2 green bell pepper
  • 1/2 kg baby squid or squid
  • 2 bags of squid ink
  • 1/2 glass of white wine
  • 200 ml fish fumet or water
  • 150 gr of fried tomato, homemade type
  • 1 clove garlic
  • 1 pinch of saffron (optional)
  • Salt
  • Olive oil
STEP BY STEP RECIPE:

1- Chop a clove of garlic, 2 spring onions and half a green bell pepper and sauté over low heat with a little olive oil and half a teaspoon of salt.homemade squid in its ink

2- When it is poached, add half a kilo of chopped and cleaned baby squid (it can be fresh, or it can be sold frozen. You can also use squid) and sauté for 5 minutes.

3- Turn up the heat and pour half a glass of white wine so that the alcohol evaporates. Lower the heat to medium, add three spoonfuls of homemade fried tomato, or if not one already prepared, stir everything for a couple of minutes, add two bags of squid ink and cover the squid with fish fumet. Stir to integrate the ink with the fumet and let it cook for about 20 minutes. Add salt if necessary.

At home, the way we most like to accompany these baby squid in its ink homemade squid in its inkI have also sometimes used quinoa or bulgur and it is equally tasty to mix with the sauce!
