White tuna with tomatoes, peppers and onions
It is the season of northern bonito, and this white tuna with tomatoes, peppers and onions is one of those tasty, easy and very quick dishes to make, which is not only very healthy but also delicious.
As I said when I made the marmitako (click here to see the recipe), The tuna season runs from the beginning of June to the end of October, which is when this fish appears in the Cantabrian coast. It is only northern bonito the one that exceeds 4 kilos in weight and is caught in the Bay of Biscay with hooks so that the fish does not suffer and offers a higher quality of meat.
So, we encourage you to prepare dishes with this wonderful fish such as this one white tuna with tomato, peppers and onion.
INGREDIENTS: (6 people)
- 1 kg of fresh tuna
- 300 gr of homemade fried tomato
- 2 cloves garlic
- 2 spring onions
- 1/ 2 red bell pepper
- 50 ml of white wine
- Aove ( extra virgin olive oil)
- Salt and pepper
- 2 bay leaves
STEP BY STEP RECIPE:
- In a low saucepan or large frying pan we pour Aove all over the surface but only a little, just enough to fry the nice. If it has not been cut at the fishmonger, you have to remove the skin and remove the bone and leave more or less large pieces like the ones in the photo. If it is in small pieces, nothing happens. Heat the oil well and cook the tuna for half a minute on each side. Just enough to seal it and brown it lightly. If you fry it or cook it too much, the tuna will be very dry. Reserve in a serving dish and add a little salt.
- Julienne the spring onions and cut the bell pepper into strips, peel the garlic and crush it with a knife and put it all over the rest of the oil where we have browned the tuna, with half a teaspoon of salt and a pinch of pepper.
- Poach over low heat for about 10 minutes with the two bay leaves.
- Add the tomato, stir, let it cook for a couple of minutes, turn up the heat and add the white wine and let it cook for another 3 minutes until the alcohol evaporates.
- Pour this sauce over the tuna in the dish and with the heat of the sauce the tuna will finish cooking.
