This homemade pulled pork o marinated and roasted pork loin head you will love it. I had always eaten it away from home and thought it was very complicated, but nothing could be further from the truth!

It takes time, of course, but it is very easy and finger-licking good.Homemade pulled pork or marinated and roasted pork loin head In addition, it is economical and can be used for a variety of recipes, such as the typical sandwich with barbecue sauce, for empanadas, as is, in small pieces with a side of salad and potatoes, in salads, in tacos, fajitas, burritos ...... Sounds good, doesn't it?

INGREDIENTS:

Spice mix:

  • 1 dessert spoon: cumin powder, sweet paprika, hot paprika, rosemary and black pepper.
  • 1 level tablespoon of: salt
  • 3 tablespoons of brown sugar

For the marinade:

  • 1 piece of pork loin head (1.3 to 1.8 kg)
  • Approximately 1 liter of water
  • 50 gr of salt
  • 50 gr of brown sugar
  • 50 ml apple cider vinegar
  • 2 tablespoons spice mix
  • 3 bay leaves

For cooking:

  • Marinated pork
  • 500 ml chicken or beef broth
  • 30 ml Worcestershire sauce
  • 60 ml apple cider vinegar
  • 1 onion
  • 2 tablespoons of mustard
  • 3 tablespoons of olive oil
RECIPE ELABORATION STEP BY STEP:
  1. In a bowl mix all the spices and the brown sugar.
  2. In a not very big pot, in which the piece of pork fits well but without too much space around it, put the meat, cover it with water, approximately one liter, the vinegar, the salt, the sugar, two spoonfuls of the previous spice mixture (the rest keep it) and the bay leaf. Stir a little to dissolve the salt and sugar. Cover and leave in the refrigerator for 24 to 36 hours. When you remember, stir a little in case any sugar or salt has remained at the bottom.
  3. After these hours, remove the piece of meat to a plate with absorbent paper and discard the liquid.
  4. Add 2 tablespoons of oil and mustard to the reserved spice mixture and stir to a paste. Coat the tenderloin.
  5. Add a tablespoon of oil in a frying pan and heat. Take the piece of meat and shake a little, letting the rest of the sauce fall to the plate and sear on both sides of the meat, over medium-high heat, being careful not to burn it. It should be lightly browned.
  6. Preheat the oven to 150 degrees.
  7. In the pot (ovenproof) put the meat, pour the sauce left over from the dish and the sauce that has been released in the pan. Cover with broth, add the peeled and julienned onion, vinegar and Worcestershire sauce and cover the pot. Cook for 3 hours and from time to time uncover and turn the meat over.
  8. If you have too much sauce, reserve the meat and put the pot on the heat to reduce the sauce until it thickens to your liking. As it contains sugar, it will be caramelized and shiny.
