Homemade russian salad with pickled mussels

Do you buy frozen Russian salad? Well, this one homemade russian salad with pickled mussels, is worth the small effort.

Yes, I know, it's very comfortable! But making it natural so little costs so much and the difference is brutal, it's worth it!

INGREDIENTS:Homemade russian salad with pickled mussels
  • 3 medium potatoes
  • 2 carrots
  • 75 gr of fine peas
  • 3 cans of tuna or bonito
  • 12 small gherkins or 5 large gherkins
  • 2 cans of pickled mussels
  • 1/2 red onion
  • Salt
  • Optional: Cilantro or parsley

For the mayonnaise:

  • 1 egg
  • Juice of 1/2 lemon
  • 1/2 teaspoon salt
  • A dash of Aove
  • Sunflower oil

STEP BY STEP RECIPE:

  1. Just boil over medium heat three potatoes with skin and two peeled carrots in a saucepan with water and a tablespoon of salt, until the potatoes are soft when pricked, between 25-35 minutes, depending on the size of the potatoes. Strain and let cool.
  2. In another saucepan cook some peas with a little salt for 12 minutes, fresh, or here if we can use frozen peas that are very good. Drain and set aside.Homemade russian salad with pickled mussels
  3. Make a homemade mayonnaise: crack an egg in a bowl, a pinch of salt, half a squeezed lemon and a drizzle of olive oil. With a blender beat and add sunflower oil little by little, until you get the thickness you prefer, more liquid or thicker. As you add more oil, it will thicken more.
  4. Cut in brunoise, thin slices, a red onion, and finely chop several sweet pickled gherkins (I prefer them to olives, which would be another option).
  5. Peel the potatoes and cut into small squares as well as the carrots. Put them in a large bowl, along with the peas, a good amount of mayonnaise (to taste, but better if it is juicy), the pickles and 3 cans of good tuna, drained. Stir carefully so that the flavors are well integrated.

Serves this homemade russian salad with pickled mussels I have used some delicious organic buckwheat toasts, a quantity of salad, some red onion on top and a couple of pickled mussels.
