Grilled watermelon and avocado gazpacho

If you like gazpachos, this one grilled watermelon and avocado gazpacho will surprise you with the touch of grilled watermelon.

The flavor is incredible, and if you have ever made gazpacho with watermelon, by letting it brown in the pan, it gives a very special touch to the gazpacho. I encourage you to try it!

Grilled watermelon and avocado gazpacho
INGREDIENTS: (4 servings)
  • 500 g of ripe pear tomatoes
  • 500 g of watermelon crustless
  • 1 clove garlic
  • 1/2 red onion
  • ½ squeezed lemon
  • 5 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 avocado
  • Basil
STEP-BY-STEP PREPARATION: ( click here to see the video recipe)
  1. First remove the skin from the watermelon and cut into pieces.
  2. Put a tablespoon of olive oil in a skillet, heat over medium-high heat and brown the watermelon, about two minutes on both sides or until you see it change color to golden brown.
  3. In a blender put the tomatoes washed and halved, and without the top part where the branch is born, together with the watermelon, garlic, salt, olive oil and the juice of half a lemon. Beat very well until creamy. Taste and adjust salt and lemon juice to taste, if necessary.
  4. Allow to cool well in the refrigerator.
  5. Serve in a bowl with some avocado cubes, a little chopped red onion, some basil leaves and another fine drizzle of olive oil.
